The puddings we enjoy as desserts today are not what was traditionally thought of as pudding at ancient dinner tables, and they are not what was traditionally known as pudding at ancient dinner tables. The majority of medieval puddings were meat-based and seasoned with herbs and spices. And sweetened cooks often served them hot. People more than likely made puddings from grains or day-old bread with nuts, fruit, or meats by the end of the 18th century. They used these puddings to stretch meals for a large family.
The creamy pudding we are more familiar with today is similar to the custard, but without the eggs.
The inventors are chemists, necessity may be the source of invention, but chemists' spouses are the inventors. If you are Alfred Bird and your wife is allergic to eggs, that is very true. Bird created an egg-free custard powder in 1837 using flavored cornstarch.
