Scottish immigrants brought their deep-fried chicken in fat to the southern United States. Fried chicken soon became a staple in the American South after its introduction to the South. Cooks used seasonings and spices to enhance the chicken's flavor over time.

Traditionally, the chicken is fried in lard. However, corn oil, peanut oil, canola oil, or vegetable oil are all commonly used.
