Drying makes this nutrient-rich meat light. After turning it into jerky, a pound of meat or poultry will weigh only about four ounces. Because the drying process removes the majority of the moisture, properly prepared jerky can be stored for months without refrigeration. Bacteria can be prevented from growing if salt is added to the meat before the drying process begins.
The word "jerky" is derived from the Spanish word charqui, which comes from the Quechua (a Native South American language) word ch'arki, which means to fire (meat).
Traditional jerky is available in individual servings and in larger packages as well. They also have it in a variety of flavors and add spices for additional heat.
