Sometimes this special meat is spelled baloney because that's how many people pronounce it. Bologna is the more common spelling, however, it is not always understood. That's because it was born in Bologna, Italy, where it was based. This kind of sausage is similar to Italian mortadella. The finely ground pork or beef sausage, or a combination is smoked and cured. Bologna in Italy contains a variety of spices that are not present in American bologna. In fact, US laws require American bologna to be finely ground and without visible lard pieces. It hardly looks like anything found in Italy. It can also be made from chicken, turkey, venison, or soy protein.

Many people like bologna sandwiches with a variety of garnishes. Some of those include mustard, ketchup, mayonnaise, cheese, lettuce, pickles, tomato, and onion.
