Candy manufacturers make their pralines a little differently around the world.
- A hard chocolate shell with a softer, often liquid filling is included in Belgian Pralines
- French Pralines – a blend of almonds and caramelized sugar – are a blend of almonds and caramelized sugar
- American Pralines – contain milk or cream and are softer and creamier, resembling fudge
Marshal du Plessis-Praslin, a French sugar industrialist who lived in Vaux-le-Vicomte during the 17th century, inspired the early pralines. These first pralines were whole almonds coated in caramelized sugar individually.
Both sugar cane and pecan trees were abundant in Louisiana, where the French settlers brought their dish to Louisiana, an area of the United States where both sugar cane and pecan trees were abundant. During the 19th century, New Orleans chefs substituted pecans for almonds, added cream to thicken the dish, and thus created the praline, which is also known throughout the Southern United States.
