Mexican vaqueros in Southwest Texas in the early 1930s created what we've come to love all over the United States. They created the fajita by using throwaway cuts of beef. However, it wasn't long before they became a staple in the area. These cowboys cooked the steak over an open fire or grill. They served it with flour or corn tortillas once cooked. The fajita was elevated in later years by fresh Pico de gallo, acamole, and southwestern spices. New audiences appeared soon as the popular meal for hardworking cowboys was introduced. The fajita became a destination food in the culinary world.
